HOW TO MAKE -- LEMON SORBET


Last weekend I was cleaning out my messy, little room when I found a little ice cream book. 
Flipping through it, I found a bunch of recipes that sounded delicious and made me wish it was summer, (but at this point, what doesn't). I found a lemon sorbet recipe that sounded easy enough. I have never made ice cream, or sorbet before. But somehow I have an ice-cream maker. 

So, here it is:


Lemon Sorbet 
makes 1-1 ½ quarts
2 cups sugar 
2½ cups water
3 tablespoons of lemon zest (about 3 lemons)
3/4 cup lemon juice (from about 3-4 lemons)
Mix together the sugar, wate, and lemon zest in a small saucepan. Turn stove onto medium heat and whisk to dissolve the sugar. The lemon zest will float in the water. When a boil is reached, remove from the heat and pour the mixture into a a shallow bowl.  Stir in the lemon juice. 
REFRIGERATE for 1 to 2 hours. 
When cold, take the mixture out and pour into you ice cream maker. Process according to the maker's directions. 
Transfer the mixture to an airtight freezer container. Cover tightly and freeze untilthe sorbet is firm.
At least 4 hours.
